My eldest son, like me, loves pastries with raisins and therefore often asks me to make a cupcake. In general, muffins are a favorite pastry for many children, especially those cooked with raisins, nuts or other goodies. And they are prepared quite simply and quickly.
Here is the recipe for my preparation of cake with raisins on kefir, which turns out very tasty.
- Flour - 2 glasses;
- Eggs - 2 pcs.;
- Sugar - 1 cup;
- Kefir - 1 glass;
- Baking powder - 2 teaspoons;
- Vegetable oil - 1/3 cup;
First you need to beat eggs with sugar.
Then add 1 cup of kefir and mix well.
Next, gradually add flour to the egg-kefir mixture continuously stirring so that no lumps form in the dough. Add baking powder and vegetable oil. Mix well.
Now add the well-washed raisins to the dough. Instead of raisins, you can use nuts or candied fruits.
It is necessary to mix everything thoroughly.
I have a special form for making a cupcake, namely a metal one with wavy sides. But you can use any other baking dish in the oven.
Tip: To prevent the cake from sticking to the mold, sprinkle it with semolina or breadcrumbs.
Pour the resulting dough into a baking dish and put in the oven.
Bake this cake with raisins preferably at a temperature of 180 degrees for 50 minutes.
But the cupcake’s readiness can be guessed by rosy bun and appetizing aroma.
It is better to cut the cupcake into portioned pieces when it cools down a little.
